For those who love sandwiches

Grilled Vegetable Sandwich

This is one of my favorite summertime meals. Of course, now that I have my new stovetop grill, I can enjoy this sandwich any time of the year. I love piling on the veggies and melting the cheese to make this feel-good sandwich come alive with mouth-watering flavors. The amounts of veggies will depend on how many sandwiches you are planning to make.

 

Grilled Roasted Vegetables

 

What you will need:

1 (1/8-inch-thick) diagonally cut zucchini
3 slices of red onion
1 large portabella mushroom
1 red bell pepper, seeded and cut into 4 pieces
½ cup balsamic vinaigrette dressing
Salt
Pepper
Sourdough bread, sliced thick
 Fresh mozzarella cheese, sliced
 Fresh spinach leaves


How to prepare:

  • Heat grill to medium-high heat.
  • Combine first 7 ingredients in a large bowl, tossing to coat. Let marinade for 30 min. Remove vegetables from bowl.  
  • Place veggies on grill and cook until soft.  ( approx. 8 min. on each side)
  • Spread olive oil on one side of each slice of bread and place the mozzarella cheese on the other side to begin melting.  Remove from grill after about 1 min.
  • Begin layering the veggies in the following order; portabella mushroom, zucchini, red pepper, onion, spinach.
  • Top with the other slice of bread to complete the sandwich.


Hint: Enjoy this delicious vegetarian lunch with fresh fruit and a cold drink.
