For those who love sandwiches

Falafel

This was my favorite fast food dish when I visited Israel, 10 years ago. Since then I continue to enjoy it as a sandwich, on a salad or with hummus and tahini.  As a vegetarian, this is my go to meal when I want a light lunch or snack.

 

Falafel

What you will need:

1 16oz. can of chickpeas
2 cloves of garlic, chopped
1 large onion, chopped
1 teaspoon of Coriander
1 teaspoon of cumin
2 ½ tablespoons of parsley, minced
Salt and pepper to taste
2 ½ tablespoons of flour
Chopped lettuce, tomato and cucumbers
Tahini sauce (store bought)
Vegetable oil


How to prepare:

  • Combine the chickpeas, garlic, onion, coriander, cumin, salt and pepper in food processor until all mixed together.
  • Add flour until it becomes a thick paste.
  • Form into small balls, about the size of a golf ball, and then slightly flatten.
  • Fry in approximately 2 inches of oil at 350 degrees until golden brown on all sides. This should only take 5-8 minutes.
  • Place falafel on paper towels to drain.
  • Fill the pita first with chopped lettuce, tomato and cucumbers.
  • Place falafels on top of the veggies.
  • Drizzle the tahini sauce on top of falafels and veggies.
You are now ready to enjoy a Middle Eastern wonder.
